Makes 1.5-2 cups

Cook time 45 min, prep time 15 min

Eggplant is such a fantastic and versatile veggie; unfortunately it usually requires loads of oil to cook it. This recipe utilises the eggplants skin to trap the moisture so it requires no oil. Eggplants are a great veggie, low calorie but high in antioxidants and at this time of year they are a great price.

Recipe

1 medium eggplant

2 Tbsp tahini

2 Tbsp lemon juice

½ tsp rock salt or tamari

2 cloves garlic

Pinch of cumin

Preheat oven to 190C and place eggplant on a tray, place in oven and bake for 45 min until very soft, the egg plant should have collapsed on itself. Remove from oven and allow it to cool.

Once cool to touch, break eggplant open and scoop out the flesh into a bowl or food processor. Mince garlic and add to bowl along with all other ingredients. You can blend the mixture or mash it depending if you want a smooth or chunky consistency, personally I prefer smoother. Taste and add more salt if wanted.

Serve with warm pita’s or on baked sweet potato.

Eggplant Moussaka

Eggplant Moussaka

This is a twist on an old favourite. It’s a great way to use eggplants without using loads of oil to cook them. You can also substitute the veggie sausages with zucchini or kumara.

Serves 2, prep time 25 min, cook time 45 min.

Recipe

1 medium eggplant

1 can diced tomatoes

1 onion

½ C water

1 tsp oil of choice (coconut, olive, rice bran etc)

1 tsp mixed herbs

2 cloves garlic

1 tsp tamari

1 tsp honey

½ tsp chilli flakes

2 tbsp tom yum paste (or curry paste of choice)

4 veggie sausages

Salt and pepper

Preheat oven to 180C and lightly grease a loaf tin.

Dice onion and place in a small pot with oil, sauté for a couple of minutes then add garlic and mixed herbs, cook for a further 1 minute before adding tomatoes, water, tamari, honey and chilli flakes. Bring mixture to a simmer and cook for 5 minutes until sauce reduces slightly. Taste and season with salt and pepper.

Slice eggplant length ways into ½ cm strips and spread each side with a little of the curry paste. Thinly slice the veggie sausages and set aside.

In loaf tin spoon a small amount of the tomato mixture followed by a layer of eggplant, more tomato then a layer of sausages. Repeat until all the ingredients are used up and pour any extra sauce over top.

Cover with lid or tin foil and bake for 45 minutes, then remove foil and bake for a further 5 min.

Serve with fresh greens and my cauliflower rice.
